Using a double opt in email list also insures that the subscriber has given you a real email address.  Many times, a subscriber will use a fake address which insures that they do not receive your information.  By informing them in the beginning that they will have to look for your email and confirm by clicking the link inside, it guarantees that you are getting an address where they will receive your messages.

This also shows that they are truly interested, and by going through this process they will most likely look forward to receiving the information you send, and will actually be looking for it and potentially buying the product that you are affiliated with.
